Red, White & Blue(berry) Cornucopia by Chef Jim Coleman (Strawberry, Blueberry & Goat Cheese Salad in a Garlic & Chive Wafflecone)

Garlic & Chive Wafflecone

1 Whole Egg 1 Egg White 1/2 Tsp. Salt 1/8 Cup Sugar 2/3 Cup All-Purpose Flour 3 Tbs. Water 2 Tbs. Melted Butter 1 Tbs. Chopped Fresh Garlic 1 Tsp. Black Pepper 2 Tbs. Chopped Fresh Chives

Beat egg and egg white with salt. Add sugar, whisk with fork for 1 minute. Add flour, water and beat until smooth. Fold in butter, garlic, black pepper and chives. If using Chef'sChoice(R) WaffleCone Express(TM), cook on setting #4 1/2 (approx 2 minutes). (For other wafflecone makers, check manufacturer's directions.)

Lift wafflecone out of the machine and wrap around cone form, hold 30 seconds then cool on wine or cooling rack - repeat three times.

Red, White & Blue(berry) Salad:

1 Pt. Strawberries 1 Pt. Blueberries 8 Oz. Goat Cheese 1 Lb. Salad Greens 1/2 Cup Toasted Pine Nuts 1/2 Cup Balsamic Vinaigrette

Hull and chop strawberries. Divide greens on four plates. Place wafflecone in center of plates. Divide ingredients in thirds. From top to bottom of cone: fill with strawberries on one side, place goat cheese crumbs in middle and add blueberries to other side of cone for red, white and blue effect. Drizzle vinaigrette. Sprinkle with nuts. Serves four.
